Chef Corky Clark, a retired professor at the Culinary Institute of America (CIA), has been a mentor to both Jeremy Sewall and Barton Seaver. Together they put together the Corky Clark Scholarship Fund, which will be awarded to eligible CIA students. This scholarship will be awarded to students who have demonstrated leadership skills, maintained at least a 3.0 GPA and spent time serving their communities.
Corky Clark is a retired professor of the CIA. Tenured for 31 years, Chef Clark taught seafood identification and fabrication. His class focuses on the principles of receiving, identifying, fabricating, and storing seafood. Through lectures and demonstrations, Chef Clark’s students learned how to identify and prepare round fish, flat fish, crustaceans, and shellfish.
